Sometimes all you need to spruce up a meal is some potatoes! There are so many ways to play with the humble spud, it never tires you! For this time, I made my 🌟Skillet-roasted baby potatoes with a roast garlic oil dressing🌟 (Salivating as I type this🤤)
Simply par boil the baby potatoes (roughly 15 potatoes) and cut them in half. In a skillet add some olive oil and let the potatoes roast on both sides until golden brown.
In another skillet, add some olive oil and 4-5 cloves of sliced garlic. Let the garlic lightly toast. Once they are done, let the oil cool. Now add the garlic oil along with some salt and chilli flakes and blitz it up. Pour over the roast potatoes and voila!
I added a dash of grated parmesan in the end because 💁♀️
